So for the past week, it has just been me and little Snick at the house since my parents headed to Cabo for their 25th anniversary.  It is always nice when it is just me and Snicky because he actually pays a little bit of attention to me when 'mom and dad' aren't here.... when they are, he almost always chooses them over me.  Feel sorry for me. I've had Snicky for 15 years now, and he pretty much rules our household.  He pretty much does whatever he wants, and due to his old age, rarely gets into trouble when he 'misbehaves.'  This encompasses a list of things (doing 'business' in the house, getting into the trash, biting family members and friends (rare but does happen), refusing to come inside, etc.  Since I had not been living at home for a few years, I forgot a few odd things about Snicky.  The past two weeks has made me remember them all again.
1.  He loves ice that has come out of a Vodka/Redbull glass (if he sees a glass with clearish color, he will stand and bark in front of you until you give up your ice)- mom made me give it up even when I told her "its MY ice" - her response was "Well he likes it"
2.  Snick also loves to stash his treats and as I learned yesterday his dog food.....  I found just yesterday a box in my closet filled a good inch with dog food.  He must have been stashing up for scarce times.
3.  Snicky hates when the suitcases come out.  I guess he fears he is going to be left behind... but he acts crazy as soon as he sees them rolling across the hardwood towards the front door.
4.  Snicky also prefers the filet mignon dog treats... he has good taste :)  Dont try to give him pig ears....
5.  Ill end here.. but Snick loves to sneak and sleep on one of the four chairs he is not supposed to be on when everyone leaves for work--- I CAUGHT HIM the other day! He didn't move quick enough!
6.  One more, Snicky loves his Granny and Poppy, and will start crying if you say "Snicker, do you wanna go see Granny and Poppy?"  At one point, they did not feel the same way about him... but now Granny even lets him sit in her lap on the couch.

Well I love this dog, and I get sad just thinking that he might not be around much longer :(  He has brought so much joy to our family.

Tonight's Menu:

Homemade Alfredo over Angel Hair Pasta - No Fettuccine
Baked Zucchini Squash
Almond Chocolate Cake (Julia Child's Recipe)

Laura came over to help cook and Chris came over to help eat. Good thing.. we had a lot of food! We started out making the cake because we thought it would take the longest... and it did... 2 hours later it was done. Who knows how long it would have taken if we were doing separately! I buttered and floured the pan while Laura put the almonds through the food processor.

Laura melted the chocolate and coffee while I mixed the butter and sugar. And so on and so on.... It took forever! After we finally got the cake in the oven, we started on the rest of the meal. I worked on the Alfredo sauce, and Laura worked on the steak. We could not stop dipping into the sauce... 1 stick of butter, 2 cups of heavy cream, 1/2 cup of Parmesan, and 3/4 cup of Mozzarella later... our Alfredo was complete... ahh it was so good! No more butter for a long time, well after we make out butter chocolate icing for the cake. First meal was a success. Maybe the next one will be a little healthier. I love good food with good friends.

Good Morning Everyone!

Last night I went to see the movie "Julie and Julia." It was such a good movie, even better than I had expected it to be.  After seeing that movie, I have a list of things I want to accomplish

1. begin blogging again
2. cook new meals at home 3 nights a week
3. be more daring when I pick a recipe (not just settling for pasta... maybe actually trying to cook lobster- too ambitious?
4. have friends over for meals at home instead of always going out
5. attempt not getting frustrated when I cook and something goes wrong.. have more of Julia Child's attitude

So Im sure the list with grow longer a I begin trying to accomplish this list of "things."  I am not sure if I want to pick recipes from all different types of people or just one single person. If you know me, you know my favorite cook is Paula Deen.  I would like your opinion.... try lots of different cooks or stick with one?  If sticking with one, who do you recommend?  Glad to be back!

Hey Everyone!

We are still in Barcelona and are going to be going home in just a few days! Mary Connell left us yesterday :( to go back to London. It was really good to see a face from home all the way over here! Yesterday, we did a lot of shopping around. They have so many cute sandals here, but no one has my size!! Wish my mom was here, she would go crazy! I might go out in search again today..... The beach is really nice here, and it is nice to have white sand again. I loved Greece, but I am not a fan of the black sand - way too hot!! I just can´t bury my toes in it while I am laying on the beach! We have decided to treat ourselves to a yummy dinner tonight. It looks like a really cute restaurant! It is a tapas restaurant like every other restaurant here, but it looks less touristy which I hope is a good thing! We had not been out in Barcelona up until last night because we never felt safe just going out as girls.... but last night we decided to with some British and Danish boys we met. They were very entertaining to say the least. Their main activity for the evening was called ¨sharking......¨ Basically, it was their way of finding a girl for the evening. I have never seen anything like it. Somehow these not so cute boys were charming all of these pretty cute girls. I guess they are pretty good at ¨sharking.¨ Christy and I kept trying to figure it out...... Although the nightlife was not quite our scene, it was a great place to people watch. Barcelona night life is crazy! Cannot wait to tell all more stories of you about these crazy people we met! :)

The street performers here are also pretty entertaining. I have to say my favorite was the Michael Jackson impersonator who made you pay him BEFORE his show started..... hmmm..... NO! He did not keep much of a crowd after telling us to pay up before he even did the moonwalk. At least give us a sneak preview! Well I am so excited about coming home to see you all! love you!

Hey Hey Hey!

We are still in Barcelona and are going to end up being here until we come back home. We check trains and flights to Madrid, Valencia, and a few other places and it is just too pricy since we have to come back to Barcelona. Mary Connell is here with us now, YAY! It is so good to see more people from back home. We slept in today and then found ZARA. Very disappointing.... I had only been to the one in London with was a trillion time better. This one was more a mix of forever 21 and H & M. Still good stores, but not the same :( I just knew I was going to find the cutest new outfit. Oh well! We walked around a whole bunch today in search of a movie theatre. It has been so long since we have seen a movie, so we went on a search for one that was playing in English. After lots of walking and confusion, we found it!! We went to see The Proposal with Sandra Bullock and Ryan Reynolds. It was so cute, sweet, and funny. I cant wait to catch up on more movies when I get home. So the countdown begins... only 6 days until I get home! I cannot wait. Miss you all so much! I think the days are going by slower now! Love you all!

Hola!

I finally made it to Spain! Yay! We were only in Athens for 1 day, but I was ready to leave. Santorini was way cooler, people were nicer, food was better and cheaper, and there was a beach just a few steps away. I mean... the Acropolis, yes it was pretty amazing.... but I was ready to move on. We took a flight to Barcelona and found out hostel quite easily. It is in a great location! We are right off of Las Ramblas which seems to be a very fun street. Most importantly, I have already spotted my first ZARA. I am so glad I waited until Barcelona to buy a cute little dress. Hopefully, ZARA will not disappoint. My friend from Belmont, Mary Connell, is meeting us tonight so I am so excited!! She is spending 4 nights with us before she goes back to London, and we go.... well we aren´t sure yet. Maybe Madrid, maybe Valencia, maybe..... ahhh we will see! Probs Madrid. We havn´t done too much today except for check in and get cleaned up. We have a shower in our rom which is nice! I forgot how much I take my very own shower at home for granted! I did find time to get a cappucino today though :) It was tasty just as Ash Love had said. Not quite sure what we are going to do tonight. Maybe go get some Sangria and Tapas?

Anyways, forgot to tell you all that Christy and I got to ride first class on the way from Athens to Santorini. Maybe the shortest flight I have ever been on but hey! Not sure how it happened, but it did! Aegean Airlines is a great airline I must say. On our 2 hour flight to Spain, they served us a full breakfast and came around multiple times offering us beverages. I am impressed Aegean!

Moving on..... I am counting down the days until I get to see my friends and family. It has been 6 1/2 weeks which is a long time for me! All of my family is going to be gone when I get back, but I will be meeting them in Knoxville the following day for my Uncles wedding. I am so excited to get to see parents, sister, grandprents, cousins, and friends. Well Ill blog again sooN! Miss yall!!!

Hello!
So now I have a little more time to update. I am day 2 in Santorini and so glad that we made this part of our trip. Last night we had such a good dinner. We split a greek pita with pork in it. I wish our pitas tasted like this back home.. so warm and tasty! We found a 24 hour bakery, which is not a good thing for me and Christy. I didn't think my sweet tooth was too strong until coming on this trip. We seem to think we need dessert after every meal. Christy got the Baklava and I got a chocolate croissant. It was the best chocolate croissant I have had yet. I thought Paris was going to win in that category.... too soon! This morning I walked around for about an hour. I figure I better get some excercise if Im going to continue eating pastries like this :) I went to do some laundry but then found out I was supposed to drop it off and let the lady do it. Too bad I already bought my own detergent and fabric softener.... I was ready! It had been tooooo long. It might have been the most expensive load of laundry but my clothes sure did smell fresh when she handed them back to me all folded perfectly! I have to also say the people here have been SO nice! This morning when I went to by my detergent, the lady at the counter was sipping on some iced coffee that I have seen EVERYBODY drinking here. When I asked what it was, she told me and tried to explain to me how to make it. I didnt really understand so she told me to hold on a minute... she came back with one for me! It was so sweet. She showed me how to make it and gave me one for free. Made my morning :) I now have the ingredients stocked in my room. She made a sale too. We went to the beach afterwards, swam, and soaked up the sun. It was so nice and relaxing. I got a yummy lunch there as well. Greek salad and a coke light (diet coke as I call it) of course. It even came with ice....filled to the very top!!! I wanted to kiss the waitor. I have been missing ice so much here! Even when you do ask for it, you get one cube. Not like sonic! Anyways, we are going to rent scooters while we are here which I am really excited about.... so Ill update you on that later. Until next time, Love you all!! DONT tell me whats happening on the Bachelorette as well.....

Hey Everyone!

So now I am in Rome! Florence was awesome by the way. My favorite part of Tuscany and one of my favorite parts of this trip so far was the Chianti wine tour I did. No one else wanted to go, but I decided to go anyways... and Im so glad I did!! It was supposed to just be a wine tasting but those glasses were pulled pretty full! I had to slow it down after Vineyard number 1. The first Vineyard was so beautiful. We got to taste their yummy olive oil and truffle oil which I bought one of each! I think I have added a few kilos to my backpack! Oh well! :) We then went to vineyard #2 near San Gimignana which was even more beautiful! There we had another wine tasting and lunch. We had different types of bruchetta, different cold cutes, an Italian rice dish, cheese dipped in honey, and more wine of course. We ended our day at San Gimignano. Some friends of mine (the Angles) had recommended that I make a visit there. Im so glad I did. It was beautiful...not to mention... the 2006 world champion gelaterie :) Such a great day! Iguess I should mention something about the rest of Florence. David was unbelievable. Goodlooking as well. The Duomo was beautiful too. I dont really have any other words to describe all of these places... I need to figure out another one besides beautiful! We arrived in Rome after a long, HOT train ride. I thought all the cabins were this hot until I ventured to another cabin 30 minutes before we got to Rome. Lets just say I was not looking too cute when I arrived to Rome. We found our hostel pretty easily. Yay! It is a campsite which is kinda cute. We have our own little "chalet" as they call it. It is a trailer actually....We even have landscaping in front! When reading about Rome, it talked alot about how Rome was just "too much".... too much of " art, people, crowds, history, etc " They were not lying but I LOVE it! We woke up really early and headed to Vatican City. St. Marks Basilica and the Vatican Museum were great to see. The Sistine Chapel seemed almost unreal. Michelangelo sure did know what he was doing! We spend the rest of day walking around what seemed to be all of Rome. We are going to see the Colisseum tommorow along with the Roman Forum, Villa Borghese, and who knows what else. I am really enjoying my self here and am really looking forwardto Santorini. I miss all of you so much!! Only a few weeks until I get to see you all! Pardon my grammar and spelling once again!

Hello everyone!
I know I have been slacking on my blog! I have just been running aroung Italy, and internet cafes have not been as widespread here in Venice and Chinque Terre. I cannot remember where I left off. Lugano, Switzerland was beautiful and very expensive. I had to go a few days without coffee and diet coke. Thankfully, I survived! We stayed at a place called Montarina which was like a little resort. There was a pool, a cute cabana boy serving cold beverages, and palm trees! I had to spend a little time there :) We rented little pedalo boats and pedalled around Lake Lugano. It was actually really tiring. We spent too long out on the lake and had to pedal at what seemed to be 100 miles per hour to get back! We were not looking too cute when we returned! I know my blog dates are a little messed up! Guess I got confused! We went to Venice after Lugano, and it was so cute! I loved all the water and bridges connecting all of Venice. Much prettier than the water in Amsterdam! I never thought I could take a picture that would look as pretty as some of the beautiful postcards but I did! It was THAT beautiful! We walked around all of Venice and did a little shopping! They had such beautiul Murano glass. I got a pretty leather handbag! :) It is a camel color and really soft! If I would have had more room in my bag, I would have gotten 5! Oh well! I also got a pretty ring! Wish my mom was here, she would love it!! We also had a lot of gelato.... its so good! I cannot help but want it after every meal! The italian men are kinda cute too! St. Marks Basilica is beautiful! It is in such a beautiful area of Venice right by the Grand Canal. The Gondola Boys were fun to watch as well! We were sad to leave Venice but not for long! Chinque Terre is the most beautiful place I have seen yet. I know I keep saying that, but it is! Oh yeah, Christy can walk now! YAY!!!! When we arrived in Chinque Terre, the train stopped right by the water. It really is breathtaking each time I see it. We hiked around for about 4 hours yesterday along 4 of the villages. We both have some pretty big bug bites. We keep telling ourselves it is just part of hiking. Guess Ill have to get used to that..... They are nasty though! We are going to the beach today! YAY! I have alread had my croissant and cafe latte, so this day is starting out perfect! I mailed some postcards as well. The little italian man at the post office was really sweet! I know this blog is really scattered... anyways, the foccacia pizza is here is yummo! I have had the same one the last 2 days- Pesto Pizza! ahhhh.... Well, we are off to Florence tomm. I am so sad to be leaving Chinque Terre :( Ill survive.... no worries! love you alll!

Hello!

We are now in Gimmelwold, Switzerland, and it by far the prettiest place I have ever been. I was really sad to leave Lorrach yesterday morning, but we had to move on with our schedule. We had an interesting morning when we arrive to Switzerland. As we were getting off the train in Interlaken, I step off the train and look back and see Christy rolling back and forth on the floor. She was crying in pain, and I could not get out of her what happened. She army crawled off the train, and I just knew she had been slapped by the train door, and that is why all of this had happened. When asked by a worker what happened, I motioned with my hands that she had been slammed. That actually did not happen.... She stepped wrong and hurt her ankle. She could not walk, and we didn't know what exactly what was wrong. We went to the ER, they did an x-ray, gave her a brace, and it was time to head to Gimmelwold. Poor Christy, she can not walk very well. At least it is a beautiful view here, and she can just enjoy being here. You can walk out the door of where we are staying, and it is breathtaking! I am going to go on a hike today. It was raining but now its sunny! YAY :) I will take plenty of pictures. I had to go on a 3 mile hike up a mountain to the grocery store yesterday afternoon, so I will hopefully come back with some toned legs! We leave for Lugano on the 5th, and then onto Italy. I miss you all so much! love you~!

Goodmorning!

It is almost 9 o'clock in Lorrach Germany, and we are visiting some good friends in their hometown.  We arrived last night, and have been having a great time ever since.  Had a yummy dinner, and I have to tell my parents I tried a bite of a new dish (it was veal with a tuna sauce, and I LIKED it).  We then had the yummiest ice cream! I got to sleep in a comfortable bed! Ahhhhhh..... It was so nice! I even have room to walk around! This is such a nice break! It is also nice to see friends from back home! Everyone is sleeping right now, but we are going to the farmer's market when they get up and then who knows! Lorrach is a really cute town! One of the BEST things is the Milka factory that is right down the road.  I can see it from out room, the beautiful purple lights glowing :) I never knew I could like a chocolate bar so much.... Amsterdam was really fun as well.  I enjoyed walked around  by the different canals, and mostly the people watching.  I think this was my favorite place to sit, have a cafe latte, and people watch.  I could have done this for hours.  One of my favorite things I did was the Museum for Handbags and Purses.  I feel like I should be saying it was some art museum, but I can get bored with those prettty quickly.  There are three people I wish were with me at this museum: my mom, my Granny Jo, and Cheryl Sanders (my moms friend).  They love and have more handbags than anyone I know.  Their personal collection of purses is probably equivalent for the ones in that museum.  It was neat to see purses from the 16th century and today.  Favorite animal skin was the eel skin.  Favorite designer today was Gucci.  I wish I could have taken pictures but they said no! :( Besides the handbag museum (wink wink), Amsterdam is known more for their red light district.  I must say I still cant really believe it.  I heard about it, saw it, and still I can't believe its real and so accessible. We just stumbled upon it while walking around.  Crazy..... Anyways, I know these blogs are scattered and filled with bad grammar, but I write them pretty quickly and remember things as I write, in no particular order! But... Im glad to be in a smaller town.  I pass KFC all the time in Europe which makes me remember the south every time :) Who knew there would be so many! Well Im rambling so ill post more later! Love you all bunches!

P.S. I am dying to check Perez Hilton.com but im too scared of finding out results from the Bachelorette. I tried to watch the full episodes on Tanja's computer, and it turned me down saying "it was only for United States viewers to watch" :( Oh well! Hopefully I can make it a few more weeks! I miss my friends, family, the bachelorette, and turtle lattes. Love you guys!

Hello!!!
We have arrive in Amsterdam after leaving Vienna and Salzburg. I LOVED Salzburg and wish we would have had more time there. It is such a cute little town. I tried the Sachertorte, and it is not my favorite.... the hot chocolate was good at The Sacher Hotel though! We tried to do the "hop on hop off" tour but it was kind of a waste of money. We went to see the trick fountains which was really fun. We went on a tour with a school group, and it was really fun to watch them getting sprayed with the fountains. We also went to see the fortress the morning we left. It would have been a BEAUTIFUL view, but it was a little too foggy. We got into Amsterdam last night so have not been able to do much yet. Wanted to update real quick! We are going to try and take advantage of this beautiful day beause I think it is back to rain tomm. We might rent bikes since it does seem like the popular thing to do. I have never seen so many bikes in my life!! The canals are really pretty here as well. We are in Amsterdam until Monday then off to Lorrach to meet up with some friends. I am really excited! Although I am having a lot of fun, I really do miss everyone at home. Send me a message or email @ an.nelson01@gmail.com Love you all! Miss you!

Hello Hello Hello!
Sorry I have not blogged in a few days. We have not had much time in Prague and Budapest so we have had to make the most of it. Prague was beautiful but a little bit chilly. We met Christy's friend Lindsey there who lived there for one summer. She is really sweet! During our time in Prague, we went to see Prague Castle which was pretty but not my very castle. The Charles Bridge was really pretty and interesting to walk over. There were many street sellers selling all sorts of goodies. We spent some time at Old Time Square which was really cute and beautiful. I wish I was better at haggling, me and Christy could have probably gotten some cute things. We went to the John Lennon wall which was pretty interesting.... I tried some Czech beer at dinner which was yumm-o! It is crazy to me that I can get a beer cheaper than a diet coke. Althought that can be nice, it has been hard since I usually drink qu it ite a few in a week. We have really had to cute back on our diet coke and coke zeros. After an 8 hour train ride to Budapest we made it. Our hostel, Tiger Tim's is really nice, and the people working here are even nicer. I slept great last night; although Christy and Lindsey were woken up my our roomates who had too much fun on the town. We did a lot of sight seeing today, and I am a little sleepy while writing this little update. I w.ish I could have seen Budapest in the sunshine... It was cold and rainy today which gave me a different impression on Budapest than say when it was beautiful and sunny in Nice. I am really excited about going to Vienna tomm. I am hoping their desserts are better than Pragues and Budapest. We have been deprived here in Eastern Europe with their sweet treats. They have NOT been good; although, we kee'p trying to give them our chance and our money. We were just sooo spoiled in France. Everything was amazing! Well I am sleepy. Happy Fathers Day Dad! I love you so much! I am so glad I got to talk to you and mom tonight. Love you lots and lots and miss you so much!

Greetings from Berlin!

Hello Hello Hello!

Greetings from Berlin! I am so sad to be writing this update because we will be leaving Berlin tommorrow early morning to go to Prague. We will be meeting a friend of Christys who has been there before. Hopefully, she can show us around! Berlin was so much fun. I enjoyed it much more than I thought I would. Although I am exhausted today from trying to see as much as we can before we are off, I must say I have learned alot. We started our day early and headed to Potsdam. Such a cute town! We went to see Neuss castle, which was beautiful. Christy and I both agreed that it was more beautiful than Versailles. We then headed to Checkpoint Charlie and to the Jewish Museum. After grabbing a quick bite of dorser kebab (mom and dad should be glad I tried this... turned out to be pretty good) we headed for some more sights. Wish we would have had more time in Berlin but our delayed flight caused a little bit of an inconvenience. Oh well! Also, must say that we are staying in the cutest hostel that I believe exists. It is called Ellens Bed and Breakfast (although breakfast is not included). It is roomy, cute, and the beds are SOO comfortable. We even have our own little porch with a yellow chair. We took pictures, no worries :) We have met the nicest people here in Germany. I just love it here! I can't wait to be back when we visit Munich and Loerrach. Well I gotta go! Love you all so much! Miss you too!

Hello!

We have to leave Nice today :( It has not been long enough but we must make it to our next city... Berlin. Im hoping the weather is nice there like it has been in Paris and Nice. We will see! I have eaten so much good food here. We can't stay away from all the treats... gelato, crepes, croissants, ahhh I could go on! We went to Monaco yesterday which was beautiful. I have never seen so many beautiful people and nice cars. Many beautiful boats as well. We made our first meal last night which was a nice switch. You all would have been proud. We had pasta and zucchini and onion stirfry. My favorite part of the meal would have been the baguette with butter and jam. Yummo! We both have nice suntans now from our afternoon at the beach. I must say that I do wish they had sand here. The pebbles can we rough on the feet. Well I gotta go pack! Love you All!

Greetings from Nice

Good afternoon everyone. I cannot find the exclamtion button on this computer, and the lettering is a little different so excuse me if my grammar is not up to par. Good news is that I passed NCLEX and even better news is that I am in Nice. I thought I loved Paris until coming here. It is one of the most beautiful places I have ever seen. Christy and I had so much fun in Paris and got to spend some time with our friends from Nashville. We even became experts at using the metro. I ate way to many ham and butter baguettes but it was well worth it. I will try to get on later and update about Nice but I must get groomed for dinner. Missing you all and loving you lots from far away.

p.s. I am trying to find a USB cord to upload pictures...no luck so far. I know I missed something.

My Beautiful Mother.  I hope I am as active, giving, and compassionate as she is when I am 50. She has been a wonderful example.

This is my Daddy-O for those of you who don't know him. I have not blogged in a week or so, and thought I should make a special blog for my dad.  He turns 50 tomorrow! Yikes.... I am very blessed to have such a great family and wonderful father.  If you read this dad, I love you very much, and I hope you have a wonderful birthday.  I am excited to spend the day golfing with you just like the old days.  Love you Dad! You are the best! My mom also turned 50 a few months ago... and since I did not have a blog then.... I feel that I should wish her a happy birthday as well.  Mom- although you have already hit the big 5-0, I must say that you are 50 and fabulous.  You are beautiful inside and out, and I love you so much! So lucky to have such wonderful parents.  Thank you for all that you do for me. Love you!

My First Practice Blog :)

Hello Everyone! Well I now have twitter, and I'm a blogger.. who knew? Well, this is my first blog, and I'm actually kind of excited! I decided I wanted to start blogging for when I go to Europe so my friends and family can keep up with my travels.  Since I am new to this... I thought I should start practicing.  So here we are.. my first blog ever. With the help of my roommate Laura, I was able to set this up successfully. Thanks Laura!

Just so you all know... this will probably not be a deep, inspiring blog .... so I hope you are not let down. I hope you enjoy it none the less. I hope you also enjoy that little picture snack above.  That would be Swizzaland or Switzerland, whichever you like.  I will be there from July 2nd- July 5th for anyone who wants to join. Well, its bed time so goodnight folks!

Yours Truly,

Autumn
